It’s been 50+ days since I started my detox, I can hardly believe it myself – no grains, no sugar, no dairy (except for a little fetta cheese), no pork, no potatoes, no sweet potatoes…. This detox has pushed me to go on a hunt for some new healthy recipes and something to satisfy my sweet tooth in the absence of my beloved friend ‘chocolate’. Funny enough I haven’t craved chocolate in weeks now that it and sugar is out of my system and I feel a million times better for it. Amazing!!
These little beauties got me over the hump and they are sooo delicious, plus I’ve got the prep down to a fine art now and can whip up a batch of these babies in 5 minutes flat!
CHEWY SALTED CARAMEL COOKIES
Makes approx. 15 cookies.
➳ 1 cup Raw Macadamia Nuts (140 grams)
➳ 1 cup of Pitted Dates (140 grams)
➳ 1 teaspoon of Organic Vanilla Extract
➳ 1 pinch of Sea Salt
Throw all ingredients into a food processor or blender in the above order, and blitz until well combined.
Scoop 1 tablespoon of mixture into your palm and roll into small compact balls. Place on a baking tray lined with baking paper and flatten each ball with a fork.
Bake at 170 degrees celsius (fan forced oven) for 12 – 15 minutes until cooked to your liking.
Note: Do set your timer to the 12 minute mark and monitor just how ‘cooked’ you like them, as they will start to brown and burn very quickly.
